When frying, is olive oil healthier than butter or vegetable oil?

Olive oil is healthier. It depends on what you mean by “frying”. A little in a pan for “pan frying” is OK. If you mean “deep frying”, Olive oil is not your best choice. It has a lower “smoke point” than a lot of other oils. For deep frying, I use peanut oil almost exclusively. It has all the omega 3 benefits of olive oil and is high in mono and poly fats just like olive oil and has a much higher smoke point than olive and vegetable oil.
