Whats wrong with high-carbohydrate diets?
Humans have existed as non-cereal eating hunters and gatherers with the exception of the past 10,000 years. As the amount of grains has increased in the diet so has the amount and degree of disease and physiologic disorders. Below is some information that explains only a few of the adverse effects that result from high carbohydrate diets: Cereal grains (wheat, corn, rice, barley, sorghum, oats, rye and millet) which are the seeds of grasses in their wild state, are minimally digestible without grinding to break down cell walls or cooking to gelatinize starch granules. Generally, when cereal-based diets were first adopted as a staple food replacing the animal-based diets of the hunter-gatherer, there was: • reduction in stature • increase in infectious disease • reduction in life span • increased infant mortality • increased incidence of bone mineral diseases • increased dental caries and enamel defects High Carbohydrate diets can also cause insulin resistance or diabetes.
