Whats the relevance of French cuisine today?
That’s the most important cuisine in the world. Of course, if you went and said that in Japan or China, they would be upset. It’s really the flavor profiles that the French have established that make it very important for me. I love the definition of the plates, how they are composed. In French cuisine, you would have a sauce. You would have a protein. I just like that. It doesn’t always happen in cuisine. Some people didn’t like Gordon Ramsay’s TV show Hell’s Kitchen it because it portrays the kitchen as a hostile environment, which is the antithesis of what you do.
