When you cook food ahead, you want to make sure you cook something that has sufficient moisture so that you don’t dry the food out during the thawing/reheating phase. Dishes like spaghetti sauce, chili, pasta casseroles, tuna or chicken casserole freeze well. If you are freezing for only one to two weeks, inexpensive re-usable plastic containers work just fine. You can also put single portions in freezer-weight plastic bags and transfer the contents to a microwave or oven-proof container for re-heating. You can also buy Corning, Pyrex, or other containers with tight lids that can go directly from the freezer to the microwave or oven. I often make spaghetti sauce ahead and freeze it in one or two portion plastic bags. Then, I boil fresh pasta while the sauce is re-heating.
