Season and yield. For farmers who are able to grow all year round, they will plant in cycles. There will be a spring crop and fall/winter crop. The spring crop is typically the best crop because it has optimal growing conditions such as rain, sunshine, daylight hours etc. Winter grains are not as high in quality as spring crops (depending on location.) In some places winter crops are used for livestock feed and/or products that don’t require premium grade grains.

Different varieties of grains (e.g. winter wheat, fall/winter rye) can withstand colder winters and give you a headstart on a summer harvest. In our temperate West Coast climate, it doesn’t make much difference if you use a winter-hardy variety (e.g. winter wheat) rather than a spring variety.
