Fats have long hydrocarbon chains (a bunch of carbon atoms lined up with hydrogen atoms attached). When there is NO double bond between two of the carbon atoms they line up straight and that is a saturated fat. When there IS a double bond, it changes the direction that one of them points and creates a kink in the hydrocarbon chain. That is an unsaturated fat. A monounsaturated fat has only one double bond; a polyunsaturated fat has more than one.
