Basically, as you’ve mentioned GIFs are limited to 256 colors. They are a great choice for simple images that do not require too much detail since the size is compressed and is smaller as compared to other formats, which is just good for the web. GIFs support transparency and interlacing (when loading the image, it first comes out as blurry then as more information is downloaded, it becomes clearer but point of warning, interlaced GIFs are larger in size). These format should be used for simple images (preferably images involving solid colors) such as logos, line drawings/art and icons. Avoid using GIFs for high detail photos especially those which have “toning” and “gradients” in them. JPG images on the other hand are images which support a large amount of colors in exchange for size. This is best for highly detailed images such as photographs and such.
