What’s the difference between Lacey, Baby Swiss, and Lacey-Baby?
Unlike other Swiss and Colby style cheeses, these three popular cheeses are actually cooked with hot water. The resulting cheeses have a softer body and pleasant mild nutty flavor. The lacey style, irregularly shaped, holes are different from the round holes in Baby Swiss due to the different ways the cheese curd is pressed into the forms. In addition, varying amounts of butterfat are separated out of the milk before filling the cheese vat. With only 7 grams of fat per serving, the Lacey Style cheese is popular with the diet conscious cheese lover.
