Do you know the difference between Creole and Cajun cooking? People who are not native to south Louisiana will say that Creole and Cajun cooking are the same thing. But the residents of south Louisiana will beg to differ. To fully understand the difference between the two styles of cuisine, we must first understand the history of the people of south Louisiana. The French European settlers arrived in the New Orleans territory in the 1690’s. These settlers were largely made up of aristocratic second sons who did not stand to inherit the family’s fortune. These settlers came to New Orleans looking for new fortunes. As these new settlers arrived, they brought with them the influences of fine French cuisine. The Native Indians introduced these new settlers to produce such as corn and bay leaves. These ingredients were soon added to the European based recipes. Since these aristocrats were well to do, they soon began to use imported slaves from Africa. These African slaves brought with them O
