Whats the difference between broiling food and baking food in then over?

In theory, broiling works as a grill inside your oven – just with the direct heat from above the food instead of below it. This is good for quick things, meats especially, and things that you want to get a good done-ness on the outside only. This is not a good way to cook a thick roast, for example, but works very well on toast (with cheese, etc), steaks, vegetables that you might otherwise grill, and sausages. Baking is more of a long-term kind of cooking method. You would bake a cake because you want the heat to radiate throughout the entire batter and cause it to cook evenly inside and out, as opposed to toasting a slice of bread, where you want it to get crunchy on the outside but (probably) not the same crunchy all the way through. If you would grill it, you can broil it. If you want something thicker or more runny cooked, I would vote for baking.
