Also, because the fan transfers heat more efficiently to the food, cooking temperatures can be lower than those used in conventional ovens. In a fan-assisted oven, the fan at the back circulates the air heated by the top and bottom elements. The time it takes to reach full temperature is the same as for a conventional oven so cooking times are not reduced. However, cooking temperatures are usually lower as with fan ovens.
