2% in milk means the butterfat content 2%. Usually cow’s milk is naturally about 2.2-3.2% butterfat. Holstein cows (the black and white ones) have low butterfat content in their milk. Other breeds like Jerseys and Guernseys have higher levels. Dairy farms often have a few of the higher butterfat producers in their herd so they will get paid more money for their milk, as they get paid by quantity and by butterfat content. Goats milk is 4-5% . It may not sound like much but it really makes a difference in calories and mouthfeel.
