Whats the best way to look after my scooping ice cream?
• Maintain the defrost and maintenance procedures for your freezer. • If necessary, remove frost with a plastic scraper daily, taking care not to spill any in the ice cream. • At the end of each day: • Smooth the ice cream’s surface • Place lids or HDPE sheets on to ice cream containers • Remove from display-freezer to storage-freezer • At the beginning of each day, remove the ice cream from storage-freezer into display-freezer about 30 minutes before you’ll need it. Note: If ice cream isn’t correctly covered and stored overnight, it might shrink from the sides of the container and look frosted. As long as maximum storage temperatures are not exceeded, this does not affect the safety or the taste of the ice cream. Remove the top layer of frost and you’ll see pristine ice cream.
