Salmon Recipe #1: Whole Baked Salmon Ingredients: 1 cleaned whole salmon, about 1.6kg -1.8kg Fresh ground pepper 1 thinly sliced onion 1 thinly sliced lemon 5 sprigs parsley 5 sprigs fresh thyme OR 1 tsp. dried thyme 1 Tbsp extra virgin olive oil Preperation: Preheat oven to 200°C Rinse the salmon inside out and pat it dry. Sprinkle the inside of the salmon with salt + pepper, and stuff it with half of the onion, half of the lemon, and all of the parsley. Tear off a sheet of aluminium foil to wrap the salmon. Place the salmon on the foil and sprinkle with thyme, salt + pepper. Rub with salmon oil. Scatter the remaining onion and lemon slices on top of the salmon and seal foil tightly. Bake it for 40-45 minutes in the oven. Cool in the foil on a rack and remove onion + lemon; skin if desired. Serve at room temperature. Enjoy!
