Beat an egg and half cup milk together to dip the fish in before rolling in the flour mix. When you add your spices to the flour/cornmeal mix most of them burn up during cooking, try sprinkling your spices driectly on the fish, then dip in the egg mix, then roll in the flour. Fry at about 340 degrees. I drop a couple of peices of popcorn into the grease, when the corn pops, the grease is ready for frying.
