Whats so great about Shun knives?
The Shun blade is made of VG-10 super-steel – composed of carbon, chromium, cobalt, manganese, molybdenum, silicon and vanadium – a metal whose properties strongly resemble those of carbon steel. Unlike carbon steel, however, the hard but flexible metal of VG-10 maintains an edge so sharp that it could split a hair like a samurai sword. No other Japanese or European knife can retain the factory sharp edge provided by the VG-10 super steel used on Shun series, even with sharpening. The thin, hard, flexible blade of a Shun knife needs only to be steeled occasionally and it will keep its factory edge for years.
