It’s not that white bread is bad, it’s just that whole grain is more nutritious. White bread is made of flour milled from the inside starchy part of the wheat berry called the endosperm, from which the bran and the germ have been removed. Then vitamins are added to the flour to replace what has been lost. Now what is missing is the insoluble fiber from the missing bran, which slows the digestion of the starch and makes you feel fuller and contains niacin (B3), iron and the mineral magnesium as well as protein. Wheat germ contains protein, Vitamin E, thiamin (B1), iron and riboflavin (B2). I know white bread is more satisfying but it just isn’t as nutritious. Basically all you are getting is starch with a sprinkling of vitamins.
