5.1 is the bare minimum if you want a true surround home theater. 2.1 is only for stereo music and television. 7.1 is great if you have the room for 7 speakers and a subwoofer, and want to get the full blu-ray experience, but not many blu-rays actually utilize all 7.1 channels yet. The difference in quality has nothing to do with the number of channels a system has, it is the build quality and parts used in the manufacture of each system. A higher quality system will likely, but not always, cost more, with diminishing returns the higher you go. A $2000 dollar system won’t be twice as good as a $1000 dollar system, but it should be significantly better. It all depends how much the difference in quality is worth to you and what your budget is.
