The big secret to making a tender pie crust is not over mixing The shortening/butter in the dough as this forms these tiny globs of butter(pea size) than when baked makes a tender crust keep you water/milk cold and butter/ margarine cold also, add your milk/water one teaspoon at a time as you cut the fat in with the flour with a pastry blender,you can find a very reasonably priced one at Walmart so much better than working with forks and more control than a food processor plus so much easier to clean than a messy processor afterwards . I usually use milk and margarine for my crusts sometimes I use real butter this makes my pie crusts taste so much better than plain shortening and water in time if you continue to make your own pie crusts you will not even need to measure and can make a flaky tender pie crust with the best of them, Crisco kept in the refrigerator makes the flakiest pie crusts though .I use this recipe and sometimes use the cold crisco other times I use butter or margarin
