Whats a good recipe for pumpkin soup using fresh pumpkin?
Heat your oven to 375F. A delicious recipe would be to use a sugar pumpkin, which is an eating pumpkin. Not the kind they sell for decoration at the market. Not to big, not too small (enough to fill the inside with a decent amount of liquid). Cut the top off at slight angle (at 1/4 of the way down from the top of the pumpkin, you are going to use the top as your lid.) Scoop out the inside fiber and the seeds. Fill the pumpkin roughly with 1/3 of Gruyere cheese. Fill almost to the top with heavy cream but leave some room. Put in a dash of salt, a little bit of black pepper and small pinch of nutmeg. With a spoon, gently mix in the some of seasoning to the cream. Put the lid back on the pumpkin and place it on a baking sheet. Cook roughly between 45min-1hr15min or until the inside of the pumpkin flesh is tender. Be careful not to overcook the pumpkin because you do not want the pumpkin to collapse on the baking sheet! Enjoy, it is an amazing soup! Serves 2-4.
