Whats a good recipe for cheese and spinach tortellini?
Cheese & Spinach Tortellini with Peas Serves 2 375g San Remo Fresh Tortellini with Cheese & Spinach 1 cup baby spinach leaves 1 cup fresh basil leaves, chopped 400g fresh ricotta cheese, crumbled 1 cup frozen peas ½ dried red chilli, chopped 1 clove of garlic, crushed or finely chopped ½ cup freshly grated parmesan cheese Cook the Tortellini according to directions. Mix together in a bowl the remaining ingredients, except the peas, setting aside some parmesan. Season with salt and freshly ground black pepper. Heat the peas in a small pan with 1/2 a teaspoon of butter and some salt. Drain the Tortellini, mix with a small amount of olive oil, then toss gently through the spinach mixture, adding the cooked peas. Serve in bowls sprinkled with remaining parmesan.
