Whats a good pasta salad recipe to use over the 4th of July weekend?
This is my own recipe, updated from my mom’s (which was ok, but not enough of the stuff I like): Take macaroni (about a 1/2 cup to cup per person). Cook as directed on the package (if you don’t have a package, that’s boil rapidly until tender). Cool and add in as desired: bacon pieces (or soy bacon if you’re veg) snipped chives or green onions tomato wedges (or grape tomatoes, they taste wonderful!) fresh broccoli florets other veggies or herbs that you have add mayonnaise to taste, salt and pepper, and chill for at least 30 minutes. This is a delicious summer pasta salad that is simple and versatile. You can add cooked shrimp for a dinner or try fresh mozzarella balls halved and grape tomatoes for a terrific lunch. I made the simple version as a side dish to chicken. 1 lb. asparagus 1 lb. orzo pasta 1 cup matchstick carrots ½ yellow pepper, diced ½ red pepper, diced 1 shallot diced Salt and pepper to taste ½ bottle of red wine vinaigrette Trim and cut the asparagus into 1 inch pieces. Cook the pasta according to package directions but with three minutes left, add the asparagus and carrots. Drain in colander and run cold water until pasta is no longer hot.
