Whats a good enchilada recipe?
First boil the chicken with herbs and 1/3 onion. Let it cool down and shred. Mix in the blender the 1/2 onion + 1/2 fresh onion, 3 or 4 tomatoes, a clove of garlic and serrano or guajillo chile. In a big pan add olive oil and fry the sauce, season. Reserve one half and add the chicken to the other. Heat the corn tortillas and fry them lightly on the pan (they must be still soft) then add the chicken and roll. Place in a tray or pyrex, cover with the sauce and add good manchego cheese (not velveeta, it sucks!) Bake for 10 min @ 180 and then put on the salamander or grill to perfectly melt the cheese and make a crust. When serving, add shredded queso fresco and crema acida (sour cream) You can also add onion rings and chopped parsley.
