Velveeta hasn’t changed, but margarine has. Try using butter the next time. I Can’t Believe It’s Not Butter is all chemicals, and they changed the formula when they removed the trans fats. My recipe from my Mom is basically the same, but uses butter and heavy cream or half and half.
