Amylase is a good enzyme to test the activity of, (it is activity you will be measuring, not concentration). Amylase is present in human saliva. It changes starch to sugar at a pH just above 7.0. You can either measure reduction of starch (using iodine) or increase in simple sugars (using Fehling’s solution).

Amylase is the easiest. That spelling is correct. Amylase is the first enzyme to start carbohydrate digestion.
