What will be the result if egg albumin is mixed with water?

Not much. Albumin is already very water soluble (albumin is the egg white from an egg) so water will just dilute it’s properties. Albumin is very sensitive to heat and will coagulate upon gentle heating. Water will diffuse the coagulation of the albumin, depending on concentration.
