What types of fruit/nut trees can I plant? ?

Depends on what you want. I live in Northern Michigan and opted to plant hazelnuts. They make a nice hedge, don’t grow too awfully high and they will spread. They are a nice understory bush or along a hill that present problems in lawn care. This is where I grew mine. You have to be patient. It took five years and mine are finally producing nuts…just have to beat the squirrels to the nuts. Hazelnuts are also called filberts. The bushes are low maintenance and present a great windbreak. As for fruit trees, you are right for apples. Look for a dwarf variety unless you are into climbing trees. It seems all of my apples are at the top so from now on I go dwarf. You can also grow blueberries either in your yard or in containers. If you choose containers, buy a variety that is condusive to containers rather than high bush.
