Most fruit will get mushy when it’s thawed, but thicker-skinned blueberries keep nicely, grapes are great (esp. if eaten frozen), and watermelon can be scooped into little balls and eaten frozen, too. If you use thawed fruits in a fruit salad the texture won’t be such an issue. Add some diced apple (or even celery, which keeps really well in the fridge if you wrap it in foil) for crunch, raisins for sweetness, and stir in some honey and yogurt (or even mayo, which sounds weird but tastes good) and cinnamon. You might also consider making fruit leather or drying fruit pieces (apple slices, banana chips, etc.). There are good directions online, and you don’t need to add sugar so it’s healthier than store-bought. Fruit leather can be kept long-term in the freezer. Good luck!
