What type of tuna does Kanoyama use?
We use 3 types of Tuna: Blue fin, Big Eye and Yellow Fin. We normally have Blue fin and Big Eye. Blue fin tuna is the most expensive and the king of tuna. Many sushi lovers order blue fin toro which is the belly part of this fish. This fish usually comes from Canada, Boston and Meditteranean. The Big Eye tuna usually comes from Boston, Long Island, Gulf of Mexico and Equador. The Yellowfin Tuna comes from Panama, Gulf of Mexico and Equador. Pricewise, Blue fin is the most expensive, with Big Eye next and then Yellowfin.
