Most types of fruit trees can be trained as a bonsai. The most popular are crabapple, cherry and dwarf pomegranate. Grape vines have also been successfully cultivated as bonsai. They will all produce fruit given the proper growing conditions. However the fruit cannot be miniaturized with bonsai training and will grow to full size if the tree can support it. One option is to start with a dwarf variety of an orchard tree and grow it out in a large pot (10+ gal.) while starting it’s training to reduce its size. One it starts to be styled as a bonsai it can be moved to a very large bonsai pot. The tree can still produce full size edible fruit this way. Some people who grow fruit producing bonsai will grow them as a very small specimen and remove the fruit before it fully develops as it may stress the tree too much.
