There are six styles of sherry, determined by how strongly they’re fortified and how long they were exposed to air: Fino — one of the driest and most elegant sherries. Manzanilla — a special fino produced around the coastal town of Sanlucar de Barrameda, delicate, slightly briny flavor. Pairs well with: serve chilled with fish and shell fish, or tapas like olives, marcona almonds (a type of Spanish almond), and jamon serrano (Spanish prosciutto). Amontillado — a medium-golden amber sherry, with a smooth, dry character. Flavors of bitter chocolate, coffee, raisins, and a distinctive nuttiness. Pairs well with: serve slightly chilled as an aperitif with olives, almonds, and hard cheeses. Amontillado is also a classic accompaniment to rich soups. Oloroso — a rich, deeply colored wine. Aged and oxid
