For the charcoal, in descending order of preference: 1. Hardwood charcoal. My favorite is the Big Green Egg kind. Whole Foods had a good line too although I haven’t tried it recently. 2. Ordinary charcoal briquettes with no lighter fluid in them. 3. Those awful “instant-light” briquettes pre-dowsed in lighter fluid that make your food taste like a petroleum product.
