What type of cereals are in bread?
Almost all bread contains some wheat. Specialty breads sometimes contain older varieties of wheat such as spelt, kamut or einkorn. Breads with another grain in their name, such as corn bread, rye bread, multi-grain or oat bread, usually have wheat in them as well – sometimes they have more wheat than anything else. Potato bread is also like this, made from potato starch and wheat. In the past, wheat was considered a very special grain and not everyone was able to have it. Grains such as barley were used more commonly then. Nowadays, the main use of barley is to make malt, a sweetener and an ingredient in beer. In Ethiopia, a type of sourdough bread called Injera is made with a grain called teff. Gluten-free breads are usually made with rice or corn. Sometimes non-cereals are used, such as soybeans, almond flour or potato starch.
