What type of beef roast is best and most tender when slow cooked in a crock pot?
The point of a crock pot is that you can start with really tough cuts like chuck roast and they will tender out to the point where they fall apart in the low, slow, wet cooking process. Roast a chuck and you won’t be able to slice it with a Light Sabre. but slow cooked it will be as tender as a good steak. Best thing I’ve done is a big, bone-in chuck steak about 3 inches thick that cooked all day with just a chopped up onion and a couple of carrots (and a teaspoon of Chipotle Pepper Powder). End of the day you could cut it with a fork and it tasted great.
