What to write my technical document on?

Hummm – what fun. A “technical document” would just be a description of something technical – not how to use this technical thing. So it could be on anything. A funny one would be something simple – say the bolt on your desk which makes the surface of your desk to go up and down – is there a bolt there? Or is there a bolt that raises and lowers the chair you sit in at your desk. You can write this “technical document” about that bolt. You would start from the standpoint of somebody who had NEVER seen a bolt before – so first you might describe threads on a shaft – how the bolt turns onto the threads – which way does it thread on – what is the purpose of the bolt – what is a wrench – where you you get one – which way do you turn the bolt to loosen it – and what direction do you turn it to return it to the “tight position” – what the bolt does when it’s tight. Detailed drawings are a good idea – with lots and lots of arrows pointing to different things. The teacher might get a laugh out
