What to eat instead of bread, rice and pasta?
Try some other grains, such as quinoa, kasha, buckwheat, millet, amaranth, teff, spelt, etc. You can get them at most health food stores. I am allergic to rice and cannot eat gluten grains, so I use alternative grains. I grind the grains to use in baking as well. Red quinoa is delicious, and is cooked the same way as rice. Buckwheat is a mild grain, and can be made into a porridge, pilaf, or used in soups, stews, etc., much like you would use barley. The yellow quinoa is a bit more earthy than the red, and I find the red to have more flavor. All of these grains are high in protein. You can make easy homemade bread, biscuits, or muffins with these grains to replace the high carb bread you are eating. Good luck.
