As 302 is a stroked 289, you can’t bore it out that much. With that said there’s a ton of aftermarket for the 289, you can probably get the power you want with a new cam, some decent heads, and a bigger carb. Alternatively you can just get a 302 crank and stroke it out as SVOman mentioned.
