What should accompany the cheese tray?
I love condiments – honeys, jams – there’s a balsamic vinegar jelly that pairs well with the Italian cheeses. I’d also have dried apricots and Marcona almonds – they’re not Italian but they go very well with the cheeses. There’s a new prosecco jelly we will be getting soon. I’d also but some Panforte Mitica out – the sweet is delicious with the cheeses. If you were going with a meat tray, I’d include prosciutto, capicola and anchovies. Columbus has a new salami with truffles that we are getting. What is the proper way to store cheese? There is a special cheese wrap which we have – even though we need to wrap everything is plastic wrap. The plastic wrap is fine if you are going to eat it soon. Cheese does need to breathe and wrapping cheese in wax paper is good for that. Cheese is best stored in the crisper. If mold develops you can simply cut the mold off.
