First, its tenderness. Most manufacturers utilize semolina or durum flour, which produces a durable pasta but one which tends to have a tougher, chewier texture when cooked. Rossi Pasta is made with a much softer and less-refined flour — a variation called “unbleached red spring wheat flour” — which gives it the distinctive homemade taste we’re famous for.
