What sauce to serve with an asparagus starter?
Something light & lemony would be great with that, you real just need a little drop to touch it up since your asparaus has the ham & cheese already. Hollandaise would be nice, but it’s richer than you need. I’d suggest making a simple lemon butter, same flavours as the Hollandaise but dead easy & quick to prepare. Just squeeze a lemon or two (or use bottled lemon juice) into a small bowl and warm it up (microwave is fine) Next, add cold butter cut into small piece into the warm lemon juice while whisking it. The juice will melt the butter, and if you add just a piece or two at a time you can stop when you reach a consistency you like – it should be a bit thick but still liquid enough to pour from the spoon. A little drizzle of this right over your asparagus bundle will be great!
Simply Wonderful Orange Sauce for(lowfat) Asparagus 1/4 cup plain nonfat yogurt 2 tablespoons fat free mayonnaise 2 tablespoons orange juice 1 teaspoon orange peel — grated 1 dash cayenne pepper orange slices — for garnish, — (optional) orange peel — for garnish, — (optional) Combine yogurt, mayonnaise, orange juice, orange peel, and cayenne. Serve asparagus and top with orange sauce. Garnish with orange slices and peel if desired. This recipe makes enough sauce for 2 pounds of fresh asparagus.
