What quality control and quality assurance procedures are needed for flour fortification?
The following points/conditions assure the fortification process: • The premix must be stored in a dry, secure location and away from direct light to prevent degradation of the vitamins. • The feeder needs to be calibrated on a regular basis and whenever the premix composition is changed or the supplier is changed. • The feed rate for the feeder needs to be calculated and an acceptable dosage range of +/- 5% of the target addition rate should be established. • Check weighing of the feeder needs to be carried out on a regular basis. • The iron spot test needs to be carried out at least three times per eight-hour shift. • Monthly samples should be taken for full analytical testing of all the micronutrients. • An inventory control system should be in place to verify that the amount of premix actually being used is close to the specified or target rate. This control system can be used to monitor premix usage and application on a monthly basis.
