If you have the Tau Codex, there should be a section that tells a little about painting the models, including which Citadel colors they used. You might also want to check the “Painting WarHammer Armies” book to see if they have the colors there. Another resource is www.games-workshop.com on the WarHammer 40,000 -> Tau section.
