What makes the differential bearings in my escort rs turbo gearbox whine?

As standard this car should have a limited slip differential. It may just be noise from this. These cars do have a propensity to destroy diff bearings but the first sign is usually the speedo stopping working as the diff strips the teeth off the nylon drive. If you have replaced 2 gearboxes already what you haven’t said is if the noise goes away after a gearbox change but returns after a short time etc. If it’s still there then the noise may well not be from the transmission. Have you checked the front wheel bearings for noise? Noises also travel in cars and sometimes the rear wheel bearings sound like they’re noisy front bearings! Does your car have ABS? Is it the type with belts on the driveshafts? If so check the motors which act as sensors.
