There is no such thing as “a” Belgian waffle. We do have different types of waffles. I wouldnt say as many as we have big cities but…we do have a lot of different ones varying from very thin ones called galettes to the thick ones called Brussels and Liège ones, some are square, some round, some rectangular or even oval. Some are eaten plain or stuffed, some are eaten with butter or sugar or fruit or whipped cream or even chocolate or a kind of syrup as topping. I personally prepare at least 5 different ones (one specifically from the village of origin of my grandmother) on a regular basis. They all need yeast, flour, milk and eggs. Some need salt and/or sugar, some don’t (Brussels waffles do not have any sugar or salt in them). They all have to rise before being poured into the waffle iron as we call it.
