What Makes a Great White Corn Tortilla?

They should have a moderately bright aroma that features sweet corn and toasted notes. Corn flavor should be moderate and slightly more intense than the corn aroma. There should be no inappropriate off notes that detract from the overall aroma or flavor. White corn tortillas are in taste balance when a moderate level of natural corn sweetness is the most evident basic taste. Very low saltiness and bitterness will follow, but there should be no sourness. The texture of white corn tortillas should be tender and the mouthfeel fairly moist, with a mode
