What Kinds of Acids Does Sour Candy Have?
Sour candy contains many types of food acid, all of which contribute to the candies’ flavor, tartness, texture, color and shelf-life. Unfortunately, some of the acids are also instrumental in lowering the sour candies’ pH. According to the article “The Power of Sour Candies,” by California dental hygienist Erika B. Feltham, RDH, reduced pH levels, often almost as low as the pH of battery acid, is one reason tart, sour and tangy candies, coated with or containing acids, cause serious dental erosion.
