make your own curry paste from chillis, garlic, ginger, turmeric, coriander root, fish sauce, oil, candlenut, and lemongrass- blend to a paste and use 2 tbsp of that. Nothing beats the fresh curry paste! Otherwise any brand will do… try to get a malaysian or thai curry powder not an indian one or it will come out tasting like indian food!
