Get a copy of the South Beach Quick and Easy Cookbook. Try some of the recipes in it. He doesn’t have to go on the very low carb diet they suggest, but the recipes in this book will help you keep him on track. He should get a glucometer and test every morning before breakfast and an hour after supper to see how he’s doing. Ask your doctor to prescribe one and also a minimum of 3 test strips per day. He can eat potatoes, but should really limit the amounts. Try to keep it under 1 cup of potatoes at suppertime. Less would be better, but you may have to cut him back gradually.
