What kind of plant does rice come from and what are rice paddies?

I’ll assume you’re pretty young, so… The rice we eat is the dried kernels of a rice plant. Rice paddies are the small fields in which rice is grown. Rice essentially grows underwater, so a paddy is setup such that it has banks to contain the water as opposed to an open field for growing other crops like corn or wheat. Rice will grow anywhere with warm to high average temperatures, and a high rainfall. That’s why there is so much in southern China, Japan and Southeast Asia in general. It’s also grown in the southern US, Central America and in northern South America. Google “rice” and you’ll get all the answers you need.
