Zest is the lemon peel after it has been finely grated. It gives recipes a little zing. Orange zest is good too. At Christmastime, I take orange and grapefruit peel and boil them in sugar and make Candied Orange Peel. Be sure to remove the white membrane, it has a bitter taste.

It is the outer layer. I have a zester that zest strips or a grater for fine pieces of zest used in sauces and salad dressings.

When a recipe calls for the Zest, it is the very top portion of the skin, normally the part with the color. If your using the Zest, be very careful not to get any of the white (pith) deeper layer in your zest, as it is very very bitter. If you’re going to be doing allot of baking where you might be using zest. They make a great little gadget that you can find in many stores that removes just the zest very easily. It’s called a ” Zestter”.
